Donald Knuth (b. 1938)

Donald Knuth wrote 'The Art of Computer Programming,' a multivolume work that apparently shaped the entire field of computer science, and he also built the TeX typesetting system that scientists and mathematicians still use today to actually publish their work cleanly. I run a bakery, so I think in terms of recipes and precision — the difference between something that mostly works and something that's actually been tested and refined until it's reliable every single time — and from what I gather, Knuth's whole career has been in that second category, meticulous, almost obsessively careful, building tools other people could depend on for decades afterward. There's a particular kind of unglamorous, exacting labor behind anything that ends up being load-bearing infrastructure for an entire field, whether that's a programming reference or, on a much smaller scale, a bread recipe a whole neighborhood ends up depending on every Saturday morning. Both take longer than people assume, and both are worth it once they hold.
