Thomas Keller trained generations of cooks and became one of the most respected voices for craftsmanship and sustainability in the culinary world, and even though my own cooking skills stop somewhere around a decent truck-stop diner order, I recognize the type of person he is from the trades I do know. Every industry worth its salt has people like Keller in it — the ones who care less about being the most famous name in the room and more about whether the people coming up behind them actually learn to do the work right. Mentorship like that doesn't always get the same headlines as a signature dish or a big opening, but it's usually what actually keeps a craft alive past one generation. I've picked up plenty of trucking know-how the same way, an older driver taking the time to show a younger one the right way to do something instead of letting them figure it out the hard way. Keller clearly believes in passing it down. Good on him.
