Julia Child introduced French cooking to American home kitchens through her cookbooks and her television show "The French Chef," and in doing so she genuinely transformed how ordinary Americans thought about food, not just how they cooked it. I came to this country at twenty-four with a suitcase and a nursing visa, and one of the very first things I remember doing, once I finally had a kitchen of my own here, was trying to recreate the dishes my mother made back in Cebu, badly at first, homesick the whole time I was cooking. There's something about a stranger's cuisine, made carefully and shared generously, that builds a bridge between two very different worlds faster than almost anything else can manage. Julia Child apparently built that exact kind of bridge for an entire country at once, making an unfamiliar cuisine feel warm and approachable instead of intimidating. I think of her sometimes now, teaching my own grandchildren the Filipino dishes I grew up on, hoping the bridge runs both directions eventually.
